Creamy Cajun Chicken Stuffed Shells are bold, comforting pasta shells filled with seasoned shredded chicken and creamy cheeses, all baked in a rich Cajun-spiced sauce. This cheesy, spicy twist on stuffed shells is perfect for cozy dinners or special occasions.

Ingredients

  • 2024 jumbo pasta shells
  • 2 cups cooked shredded chicken
  • 1 tablespoon Cajun seasoning (plus more to taste)
  • 4 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1 cup heavy cream
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • 1/3 cup grated Parmesan cheese
  • Fresh parsley, chopped (optional for garnish)

Instructions

  1. Preheat oven to 375°F and grease a baking dish.
  2. Cook jumbo shells in salted boiling water until just al dente. Drain and rinse with cool water.
  3. In a bowl, combine shredded chicken, cream cheese, 1/2 cup mozzarella, 1/2 cup cheddar, Cajun seasoning, garlic powder, onion powder, salt, and pepper until smooth.
  4. Stuff each shell with the chicken mixture and place in the baking dish.
  5. In a saucepan, heat heavy cream over medium heat. Stir in Parmesan, remaining cheddar and mozzarella, and a dash of Cajun seasoning. Cook until melted and smooth.
  6. Pour cheese sauce over the stuffed shells. Cover with foil and bake for 25 minutes. Uncover and bake an additional 10–15 minutes until golden and bubbly.
  7. Let rest for 5 minutes. Garnish with parsley before serving.

  • Mix in spinach or sautéed veggies for added nutrition.

  • Rotisserie chicken works great for a shortcut.
