Creamy chicken and mushroom skillet is a one-pan wonder that’s rich, comforting, and packed with flavor. Tender chicken is seared golden and simmered in a velvety garlic-mushroom cream sauce with herbs and Parmesan for a satisfying, restaurant-worthy meal made at home.

Ingredients

  • Boneless, skinless chicken breasts or thighs
  • Salt
  • Black pepper
  • Olive oil
  • Butter
  • Garlic (minced)
  • Mushrooms (cremini, button, or a mix, sliced)
  • Chicken broth
  • Heavy cream
  • Dijon mustard (optional)
  • Grated Parmesan cheese
  • Fresh thyme or parsley (for garnish)

Instructions

  1. Season chicken with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 5–7 minutes per side until golden and cooked through. Remove and set aside.
  3. In the same skillet, melt butter and sauté garlic for 30 seconds until fragrant.
  4. Add mushrooms and cook until browned and tender, about 6–8 minutes.
  5. Pour in chicken broth, scraping up browned bits from the pan. Simmer for 1 minute.
  6. Stir in heavy cream, Dijon mustard (if using), and Parmesan. Simmer until slightly thickened.
  7. Return chicken to the skillet and simmer 2–3 more minutes, spooning sauce over top.
  8. Garnish with fresh herbs and serve warm.

Notes

  • Add spinach or peas for extra color and nutrients.
  • Swap cream with coconut milk and skip cheese for a dairy-free version.
  • Use chicken thighs for juicier texture.
