Ingredients

  • 2 lb boneless, skinless chicken breasts, sliced
  • 3 bell peppers, sliced
  • 1 large onion, sliced
  • 2 tablespoons olive oil
  • 2 tablespoons fajita seasoning
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1 1/2 cups shredded cheddar or Mexican-blend cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Toss the sliced chicken with olive oil, fajita seasoning, garlic powder, salt, and black pepper.
  3. Spread the seasoned chicken evenly in the prepared baking dish.
  4. Top the chicken with sliced bell peppers and onion.
  5. In a bowl, mix the cream cheese and sour cream until smooth.
  6. Spread the creamy mixture evenly over the chicken and vegetables.
  7. Sprinkle shredded cheese over the top.
