12 oz fully cooked chicken sausage, sliced
10 oz cheese tortellini (fresh or refrigerated)
1 tablespoon olive oil or butter
1 small onion, diced
2 carrots, chopped
1 celery stalk, chopped (optional)
2 cloves garlic, minced
4 cups chicken broth
1 cup heavy cream or half-and-half
2 cups fresh spinach or kale (optional)
1 teaspoon Italian seasoning
Salt and pepper to taste
1/4 teaspoon crushed red pepper flakes (optional)
Grated Parmesan cheese (optional, for serving)
Instructions
Heat olive oil or butter in a large pot over medium heat. Add onion, carrots, and celery. Sauté for 5–6 minutes until softened.
Stir in garlic and sliced chicken sausage. Cook for 2–3 minutes until sausage is lightly browned.
Pour in chicken broth and bring to a gentle boil.
Add cheese tortellini and cook according to package directions (usually 4–6 minutes).
Reduce heat and stir in heavy cream and Italian seasoning. Simmer for 5–10 minutes to blend flavors.
If using spinach or kale, stir it in and cook until wilted.
Season with salt, pepper, and crushed red pepper flakes to taste.

Use spicy or apple-flavored chicken sausage for a different twist.
