Creamy Chicken Stroganoff is a comforting and flavorful dish made with tender chicken, mushrooms, and a rich sour cream sauce. It’s a quick, one-pan meal perfect for weeknight dinners or cozy weekends.

Ingredients

  • 1 1/2 lbs boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 yellow onion, diced
  • 3 garlic cloves, minced
  • 8 oz cremini or white mushrooms, sliced
  • 2 tbsp all-purpose flour
  • 2 cups chicken broth
  • 3/4 cup sour cream
  • 1 tbsp Dijon mustard
  • 1 tsp paprika
  • 2 tbsp fresh parsley, chopped (for garnish)
  • Cooked egg noodles, rice, or mashed potatoes (for serving)

Instructions

  1. Season chicken pieces with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Cook the chicken until browned and cooked through. Transfer to a plate.
  3. In the same skillet, melt butter and sauté diced onions until softened. Add garlic and mushrooms, cooking until mushrooms are browned and tender.
  4. Sprinkle flour over the mushroom mixture and stir to coat. Cook for 1 minute to remove raw flour taste.
  5. Gradually whisk in chicken broth until smooth. Stir in sour cream, Dijon mustard, and paprika.
  6. Return chicken to the skillet and simmer for a few minutes until sauce thickens and chicken is heated through.
  7. Garnish with parsley and serve hot over noodles, rice, or mashed potatoes.
