Creamy Garlic Chicken & Broccoli Rotini is a hearty one-skillet meal featuring tender chicken, crisp broccoli, and rotini pasta tossed in a rich garlic-Parmesan cream sauce. Comforting, flavorful, and ready in about 35 minutes.

Ingredients

  • 2 boneless chicken breasts, cut into bite-sized cubes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • 12 ounces rotini pasta
  • 3 cups fresh broccoli florets
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning

Instructions

  1. Bring a large pot of salted water to a boil. Cook rotini pasta until almost al dente. Add broccoli in the last 2–3 minutes. Drain and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken, season with garlic powder, salt, and pepper, and sear until golden and cooked through. Remove and set aside.
  3. In the same skillet, melt butter over medium heat. Add minced garlic and sauté for 1 minute.
  4. Pour in chicken broth and stir, scraping up browned bits.
  5. Stir in heavy cream, Parmesan, and Italian seasoning. Simmer 3–5 minutes until slightly thickened.
  6. Return pasta, broccoli, and chicken to the skillet. Toss until well coated in the sauce.
  7. Serve hot, topped with extra Parmesan if desired.

Notes

  • Swap rotini for penne or fettuccine.
  • Add sun-dried tomatoes, mushrooms, or red pepper flakes for extra flavor.
  • Use half-and-half or Greek yogurt for a lighter sauce.
  • Use frozen broccoli if fresh isn’t available—add it during pasta cooking.
