A comforting one-pan Creamy Garlic Chicken & Vegetables featuring tender chicken and colorful vegetables coated in a rich, savory garlic cream sauce that’s simple yet deeply satisfying.

Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 4 garlic cloves, minced
  • 1 small onion, sliced
  • 2 cups broccoli florets
  • 1 cup carrots, sliced
  • 1 cup bell peppers, sliced
  • 0.75 cup chicken broth
  • 0.75 cup heavy cream
  • 1 tsp Italian seasoning
  • 0.75 tsp salt
  • 0.5 tsp black pepper
  • 0.5 cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Season chicken with salt and black pepper.
  2. Heat olive oil and butter in a large skillet over medium heat.
  3. Add chicken and cook until golden on both sides and fully cooked. Remove and set aside.
  4. In the same skillet, add sliced onion and cook until softened.
  5. Stir in garlic and cook briefly until fragrant.
  6. Add broccoli, carrots, and bell peppers, sautéing until just tender.
  7. Pour in chicken broth and simmer for 3–4 minutes.
  8. Stir in heavy cream and Italian seasoning, letting the sauce thicken slightly.
  9. Add Parmesan cheese and stir until melted and smooth.
  10. Return chicken to the pan, spoon sauce over it, and simmer for a few minutes.
  11. Garnish with fresh parsley and serve warm.

Notes

  • Chicken thighs provide extra juiciness, but breasts work well.
  • Half-and-half can be used for a lighter sauce.
  • Add mushrooms or zucchini for more vegetables.
  • Serve over rice, pasta, or mashed potatoes.
