Creamy Garlic Mushroom Chicken Thighs is a one-pan comfort dish featuring juicy chicken thighs simmered in a rich garlic cream sauce with tender mushrooms. It’s flavorful, satisfying, and perfect for a cozy dinner.

Ingredients

  • 6 boneless, skinless chicken thighs
  • Salt and black pepper, to taste
  • 2 tbsp olive oil or butter
  • 4 cloves garlic, minced
  • 8 oz mushrooms (cremini, baby bella, or white), sliced
  • 1/2 cup chicken broth
  • 3/4 cup heavy cream
  • 1/3 cup grated Parmesan cheese
  • 1 tsp fresh thyme or 1 tbsp fresh parsley, chopped
  • Optional: 1/4 cup chopped onion or shallots, pinch of red pepper flakes, 1 tbsp lemon juice

Instructions

  1. Season chicken thighs with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken thighs for 4–5 minutes per side until golden and cooked through. Remove from skillet and set aside.
  3. In the same skillet, add more oil if needed. Sauté garlic (and onions if using) for 30 seconds until fragrant.
  4. Add sliced mushrooms and cook for 5–7 minutes until browned and softened.
  5. Pour in chicken broth to deglaze the pan, scraping up any browned bits.
  6. Stir in heavy cream and Parmesan cheese. Simmer for 3–5 minutes until slightly thickened.
  7. Return chicken thighs to the skillet. Spoon sauce over chicken and simmer together for another 3–5 minutes.
  8. Garnish with thyme or parsley and serve hot.

Notes

  • For lighter sauce, substitute half-and-half for heavy cream.
  • Add spinach during the last few minutes of simmering for extra veggies.
  • Coconut cream and nutritional yeast can be used for a dairy-free version.
  • Add a splash of lemon juice or white wine for brightness.
  • Serve with mashed potatoes, pasta, or crusty bread.
