Creamy German Goulash is a hearty and comforting stew made with tender beef, caramelized onions, and a rich paprika-spiced sauce finished with sour cream or heavy cream. Perfect for cozy dinners and weekend cooking.

Ingredients

  • 2 lbs beef chuck roast, cut into bite-sized cubes
  • 2 large onions, thinly sliced
  • 2 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 tbsp sweet paprika
  • 1/2 tsp caraway seeds (optional, for traditional flavor)
  • 3 cups beef broth
  • 1 bay leaf
  • 1/2 cup sour cream or heavy cream
  • 2 tbsp olive oil or butter (for browning)
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Heat oil or butter in a large Dutch oven over medium-high heat. Sear the beef in batches until browned on all sides, then set aside.
  2. In the same pot, sauté the sliced onions until golden and caramelized, about 15–20 minutes, stirring frequently.
  3. Add garlic, tomato paste, paprika, and caraway seeds. Cook for 1–2 minutes.
  4. Return the beef to the pot, pour in the beef broth, add the bay leaf, and bring to a simmer.
  5. Cover and simmer on low heat for 1.5 to 2 hours, until the beef is fork-tender.
  6. Stir in sour cream or heavy cream to make the sauce smooth and creamy.
  7. Adjust seasoning with salt and pepper, remove bay leaf, and serve hot with a sprinkle of parsley.

  • Use extra sour cream and a splash of vinegar for a tangier version.
