Ingredients

  • 1 lb potato gnocchi (store-bought or homemade)
  • 3 cups fresh baby spinach
  • 1/2 cup crumbled feta cheese
  • 2 cloves garlic, minced
  • 3/4 cup heavy cream or half-and-half
  • 1 tbsp olive oil or butter
  • Salt, to taste
  • Black pepper, to taste
  • Optional: pinch of red pepper flakes or grated nutmeg

Instructions

  1. Heat a large skillet over medium heat and add olive oil or butter.
  2. Add the gnocchi directly to the pan and sauté for 4–5 minutes until golden and slightly crisp.
  3. Stir in minced garlic and cook for 30 seconds until fragrant.
  4. Pour in the cream and bring to a gentle simmer, allowing it to thicken slightly.
  5. Add spinach and stir until wilted into the sauce.
  6. Crumble in the feta and season with salt and pepper.
  7. Stir until everything is creamy and well combined.
  8. Serve hot, optionally garnished with red pepper flakes or nutmeg.
