Creamy Lemon Rosemary Chicken Pasta is a bright, comforting dish where tender chicken and al dente pasta are coated in a lemon‑cream sauce infused with fresh rosemary. It’s elegant yet easy enough for weeknight dinners and perfect for those times you want something rich but refreshing.

Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs, sliced
  • Salt and black pepper, to season
  • 12 tbsp olive oil or butter
  • 23 garlic cloves, minced
  • 12 tsp fresh rosemary, finely chopped (or 1 tsp dried, crushed)
  • 1 cup heavy cream
  • ½ cup chicken broth
  • Juice of 1 lemon
  • Zest of 1 lemon
  • ½ cup grated Parmesan cheese
  • 12 oz pasta (fettuccine, linguine, or penne)
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta until al dente. Reserve some pasta water, then drain.
  2. While pasta cooks, season chicken slices with salt and pepper. In a large skillet over medium-high heat, heat olive oil or butter and cook chicken until golden and cooked through. Remove to a plate and set aside.
  3. In the same skillet, reduce heat to medium. Add garlic and rosemary and sauté until fragrant (about 1 minute).
  4. Pour in chicken broth and heavy cream. Let it simmer gently for 3–4 minutes until slightly reduced.
  5. Stir in lemon juice, lemon zest, and grated Parmesan. Whisk until smooth and creamy. Adjust seasoning with salt and pepper.
  6. Return the cooked chicken to the skillet. Add the drained pasta and toss everything together until pasta is coated and heated through. If the sauce is too thick, add a splash of reserved pasta water to loosen it.
  7. Serve immediately, garnished with chopped parsley and extra Parmesan if desired.

Notes

  • For extra vegetables, stir in baby spinach or sautéed mushrooms.
  • You can use cream cheese or mascarpone to enrich the sauce further.
  • Use coconut milk or cashew cream for a dairy‑free version (skip the Parmesan).
  • Swap in whole wheat or gluten‑free pasta depending on dietary needs.
  • Leftovers reheat best on the stovetop with a splash of broth or cream to restore creaminess.
