Creamy Parmesan Beef Rigatoni is a comforting pasta dish featuring tender rigatoni noodles coated in a rich Parmesan cream sauce with savory ground beef. It’s a quick and satisfying dinner perfect for any night of the week.

Ingredients

  • 12 oz rigatoni pasta
  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning or a mix of dried basil and oregano
  • Optional: 1/4 tsp red pepper flakes
  • Optional: chopped fresh parsley for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Cook the rigatoni according to package instructions, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Sauté the chopped onion until softened, about 3–4 minutes. Add the garlic and cook for another minute.
  3. Add the ground beef and cook until browned, breaking it apart with a spoon. Season with salt, pepper, and Italian seasoning.
  4. Reduce the heat to low and stir in the heavy cream. Let it simmer for 3–5 minutes until slightly thickened.
  5. Add the grated Parmesan cheese and stir until the sauce is smooth and creamy.
  6. Add the cooked rigatoni and toss to coat evenly in the sauce.
  7. Garnish with additional Parmesan and chopped parsley before serving.

Notes

  • Use freshly grated Parmesan for the smoothest, most flavorful sauce.
  • Half-and-half can be used instead of heavy cream for a lighter version.
  • Spinach, mushrooms, or bell peppers can be added for extra veggies.
  • Swap beef for turkey or sausage to change the flavor profile.
  • Add a pinch of red pepper flakes for a bit of heat.
