This Creamy Spinach Gnocchi with Smoked Paprika Garlic Sauce is a rich, one-pan meal that’s ready in just 20 minutes. Pillowy gnocchi are cooked directly in a velvety sauce made with garlic, smoked paprika, cream, and fresh spinach—making it the perfect quick comfort food.

Ingredients

  • 1 lb potato gnocchi (fresh or shelf-stable)
  • 1 tablespoon olive oil or butter
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 cup heavy cream (or half-and-half)
  • 1/2 cup vegetable or chicken broth
  • 3 cups fresh spinach (or 1 cup frozen, thawed and drained)
  • 1/3 cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • Red pepper flakes (optional, for heat)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté garlic for 30 seconds until fragrant.
  2. Add smoked paprika and let it bloom for 10–15 seconds.
  3. Pour in cream and broth, bring to a gentle simmer.
  4. Add gnocchi directly to the sauce and cook for 4–5 minutes, stirring occasionally, until tender and sauce begins to thicken.
  5. Stir in spinach and let it wilt. Mix in Parmesan until melted and creamy.
  6. Season with salt, pepper, and red pepper flakes if using. Serve hot.

Notes

  • Add cooked chicken, shrimp, or sausage for a protein boost.
  • Swap spinach for kale, or stir in roasted red peppers for extra flavor.
  • For a dairy-free version, use coconut cream and nutritional yeast.
  • Use frozen gnocchi if needed—just increase cook time slightly.
  • No need to boil the gnocchi separately—it cooks in the sauce.
