These Crispy Asparagus Asiago Spears feature tender asparagus wrapped in flaky phyllo pastry with nutty, savory asiago cheese, baked until golden and crisp. Perfect for elegant appetizers, holiday spreads, or quick entertaining, they can be made from scratch or baked straight from frozen.

Ingredients

  • Fresh asparagus spears
  • Asiago cheese, thinly sliced or shaved
  • Phyllo pastry sheets
  • Melted butter or olive oil (for brushing)

If using pre-assembled frozen spears, no prep is needed—just bake according to instructions.

Instructions

  1. If using frozen pre-made spears:
    • Preheat oven according to type: Hotel quality oven: 350°F for 8–14 minutes; Electric oven: 400°F for 16–22 minutes; Gas oven: 375°F for 16–20 minutes.
    • Arrange frozen spears on a parchment-lined baking sheet, ensuring they’re not touching.
    • Bake, rotating the tray 180° halfway through, until phyllo is golden brown.
    • Serve immediately while hot and crispy.
  2. If making from scratch:
    • Trim and blanch fresh asparagus until just tender-crisp, then pat dry.
    • Cut asiago into thin strips or shavings and place alongside each spear.
    • Wrap each spear in phyllo, brushing lightly with melted butter between layers.
    • Bake at 375°F for 15–18 minutes, until golden and crisp.

Notes

  • Swap asiago for parmesan or gruyère for a different flavor profile.
  • Sprinkle black pepper or smoked paprika over the pastry before baking for extra flavor.
  • Baked spears are best enjoyed fresh, but leftovers can be reheated in a 375°F oven for 5–7 minutes.
  • Do not microwave, as phyllo will lose its crispness.
