These Crispy Baked Potato Skins are the ultimate appetizer or side dish. Loaded with melted cheddar cheese, crispy bacon, and a dollop of sour cream, these golden, crunchy skins are irresistible. Perfect for parties, game day, or a delicious snack.

Ingredients

  • For the Potato Skins:
  • Small baking potatoes
  • Butter, melted
  • Seasoned salt
  • Garlic powder
  • Black pepper
  • For the Toppings:
  • Cheddar cheese, shredded
  • Bacon, cooked and crumbled
  • Sour cream
  • Green onions, chopped

Instructions

  1. Wash, dry, and pierce the potatoes. Bake at 425°F for 40–50 minutes until fork-tender.
  2. Cut baked potatoes in half and scoop out the insides, leaving a ¼-inch shell.
  3. Mix melted butter with seasoned salt, garlic powder, and black pepper. Brush both sides of the potato skins with the mixture.
  4. Place the skins cut side down on a baking sheet and bake at 425°F for 15 minutes. Flip and bake for another 5 minutes to crisp them up.
  5. Fill the skins with shredded cheddar cheese and crumbled bacon, then bake for another 5–7 minutes until the cheese melts.
  6. Top with sour cream and chopped green onions. Serve immediately.
