Ingredients

  • 24 chicken breasts or thighs, pounded thin
  • Salt and black pepper, to taste
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup panko breadcrumbs
  • 1 tsp garlic powder
  • 1/3 cup Parmesan cheese, finely grated
  • Olive oil or neutral oil for frying
  • 24 toasted sandwich rolls or brioche buns
  • 1 cup romaine lettuce, shredded
  • 1/2 cup Caesar dressing (homemade or store-bought)
  • Parmesan shavings, for topping

Instructions

  1. Season chicken with salt, pepper, and garlic powder.
  2. Set up a dredging station with three bowls: flour, beaten eggs, and panko mixed with grated Parmesan.
  3. Dredge each chicken piece in flour, then egg, then breadcrumb mixture, pressing to coat.
  4. Heat oil in a skillet over medium heat. Fry chicken for 3–4 minutes per side until golden and cooked through. Drain on paper towels.
  5. Toast the sandwich buns until golden.
  6. Spread Caesar dressing on both sides of the buns. Add shredded romaine, crispy chicken, and Parmesan shavings.
  7. Serve immediately while warm and crisp.
