Crispy cottage cheese pizza shards are high-protein, thin, crunchy snacks that mimic the flavor of pizza with a chip-like texture. Perfect for dipping, snacking, or topping salads, they’re made with a simple base of cottage cheese, herbs, and shredded cheese, then baked to golden perfection.

Ingredients

  • 1 cup cottage cheese (blended until smooth)
  • 1 egg
  • 1/2 cup shredded mozzarella or Parmesan cheese
  • 1 tsp Italian seasoning or dried oregano
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • Optional: chili flakes, chopped fresh basil, or finely diced pepperoni

Instructions

  1. Preheat the oven to 375°F (190°C) and line a large baking sheet with parchment paper.
  2. Blend the cottage cheese until smooth.
  3. In a bowl, combine the blended cottage cheese, egg, shredded cheese, Italian seasoning, garlic powder, and salt. Add optional mix-ins if using.
  4. Spread the mixture thinly (about 1/8 inch thick) onto the prepared baking sheet.
  5. Bake for 20–25 minutes or until the edges are golden and the center is firm and dry.
  6. Let cool for a few minutes, then slice or break into shards.
  7. Serve as-is or with your favorite dip.

Notes

  • For extra crispiness, bake a little longer or make two thin batches.
  • Use full-fat cottage cheese for richer flavor.
  • Customize with toppings like pepperoni, sun-dried tomatoes, or olives.
  • Best eaten fresh but can be re-crisped in the oven.
  • Not suitable for freezing as they lose their crispness.
