Ingredients
3 large russet potatoes
3 tbsp olive oil (or neutral oil for frying)
3 cloves garlic, minced
½ tsp garlic powder
½ tsp salt (plus more to taste)
¼ tsp black pepper
⅓ cup grated Parmesan cheese
1 tbsp chopped fresh parsley (optional)
1 tbsp cornstarch (optional, for extra crispiness)
Instructions
Peel (optional) and cut potatoes into thin fries. Soak in cold water for 30 minutes to remove excess starch.
Drain and thoroughly pat dry the fries.
If baking or air frying, toss fries with olive oil, cornstarch, garlic powder, salt, and pepper. If deep frying, skip oil and cornstarch.
To bake: Preheat oven to 425°F (220°C). Bake fries in a single layer for 30–35 minutes, flipping halfway.
To air fry: Cook at 400°F (200°C) for 20–25 minutes, shaking halfway through.
To deep fry: Heat oil to 350°F (175°C). Fry in batches for 5–6 minutes until golden. Drain on paper towels.
Heat 1 tbsp olive oil in a small pan. Sauté minced garlic for about 30 seconds until fragrant.
Toss hot fries in garlic oil, then sprinkle with Parmesan and parsley. Mix well to coat evenly.
Notes
Add chili flakes or cayenne for a spicy kick.
Drizzle with truffle oil for a gourmet version.
Use shredded mozzarella for cheesy fries.
Sweet potatoes make a great variation.
