2 large boneless, skinless chicken breasts (halved lengthwise)
1/2 cup grated Parmesan cheese
1/2 cup breadcrumbs
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
2 tablespoons butter
4 cloves garlic, minced
1/2 cup chicken broth
1 cup heavy cream
1 teaspoon Italian seasoning
2 tablespoons fresh parsley, chopped
Instructions
Slice the chicken breasts in half lengthwise to create thin cutlets.
In a shallow bowl, mix Parmesan cheese, breadcrumbs, garlic powder, salt, and black pepper.
Coat each chicken piece in the mixture, pressing gently so it adheres.
Heat olive oil in a large skillet over medium heat.
Cook the chicken for 4–5 minutes per side until golden brown and cooked through. Remove and set aside.
In the same skillet, melt butter and add minced garlic. Cook briefly until fragrant.
Pour in the chicken broth and let it simmer for 2–3 minutes.
Stir in the heavy cream and Italian seasoning and cook until the sauce thickens slightly.
Return the chicken to the pan and spoon the sauce over the top.
Garnish with fresh parsley and serve warm.
Notes
Do not overcrowd the pan to keep the chicken crispy.
Add a squeeze of lemon juice to the sauce for brightness.
