Crock-Pot Chicken Teriyaki is an easy, flavorful slow cooker meal featuring tender chicken simmered in a sweet and savory homemade teriyaki sauce. Perfect for busy weeknights, it’s delicious over rice and garnished with green onions and sesame seeds.

Ingredients

  • 1.52 lbs boneless, skinless chicken breasts or thighs
  • 1/2 cup low-sodium soy sauce
  • 1/3 cup honey or brown sugar
  • 3 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 2 tbsp rice vinegar or apple cider vinegar
  • 1 tbsp sesame oil
  • 1/4 cup water or chicken broth
  • 1 tbsp cornstarch
  • 1 tbsp cold water (to mix with cornstarch)
  • Sliced green onions, for garnish
  • Sesame seeds, for garnish

Instructions

  1. Place chicken in the bottom of the Crock-Pot.
  2. In a bowl, whisk together soy sauce, honey, garlic, ginger, vinegar, sesame oil, and water or broth.
  3. Pour the sauce over the chicken, cover, and cook on low for 4–5 hours or high for 2–3 hours until chicken is tender.
  4. Remove the chicken and shred or slice it.
  5. Mix cornstarch with 1 tbsp cold water and stir into the sauce in the Crock-Pot.
  6. Return chicken to the pot, switch to high, and cook an additional 15–20 minutes until sauce thickens.
  7. Serve over rice and garnish with green onions and sesame seeds.

  • Add vegetables like broccoli, carrots, or bell peppers during the last hour of cooking.
  • Use tofu for a vegetarian version.
  • For spice, stir in sriracha or red pepper flakes.
  • Add pineapple chunks for a tropical variation.
