Crockpot Beef and Broccoli is a flavorful, slow-cooked version of the takeout favorite, featuring tender beef strips in a savory garlic-soy sauce with crisp broccoli. Served over rice, it’s an easy, comforting weeknight meal.

Ingredients

  • 1.5 lbs flank steak or sirloin, thinly sliced
  • 1 cup beef broth
  • 1/2 cup low-sodium soy sauce
  • 1/3 cup brown sugar
  • 1 tbsp sesame oil
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, grated (optional)
  • 2 tbsp cornstarch
  • 3 cups broccoli florets (fresh or frozen and thawed)
  • Cooked white or brown rice, for serving
  • Optional: sliced green onions and sesame seeds, for garnish

Instructions

  1. Place sliced beef into the crockpot.
  2. In a bowl, whisk together beef broth, soy sauce, brown sugar, sesame oil, garlic, and ginger.
  3. Pour the sauce over the beef. Cover and cook on low for 4–5 hours or high for 2.5–3.5 hours, until beef is tender.
  4. 30 minutes before serving, mix cornstarch with 2–3 tablespoons of water and stir into the slow cooker to thicken the sauce.
  5. Stir in broccoli (steam fresh broccoli first for best texture or thaw frozen broccoli before adding).
  6. Continue cooking for 20–30 minutes until sauce thickens and broccoli is tender-crisp.
  7. Serve hot over rice and garnish with green onions and sesame seeds if desired.

Notes

  • Add extra vegetables like mushrooms, snow peas, or bell peppers.
  • Use honey instead of brown sugar for a different sweetness.
  • Spice it up with sriracha or crushed red pepper flakes.
  • Double the sauce if you like it extra saucy.
  • Serve over noodles or cauliflower rice for variation.
