Tender slow-cooked chicken simmered in a rich, creamy garlic Parmesan sauce, creating an easy and comforting meal perfect for pasta, rice, or mashed potatoes.

Ingredients

  • 2 lb boneless, skinless chicken breasts or thighs
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp olive oil (optional for searing)
  • 5 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 4 oz cream cheese, softened
  • 0.5 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Season the chicken with salt and black pepper.
  2. If desired, heat olive oil in a skillet and sear the chicken briefly on both sides for added flavor.
  3. Place the chicken in the crockpot.
  4. Add garlic, chicken broth, heavy cream, cream cheese, Parmesan cheese, and Italian seasoning.
  5. Cover and cook on low for 6–7 hours or on high for 3–4 hours, until chicken is tender and cooked through.
  6. Stir the sauce until smooth and creamy.
  7. Shred the chicken in the crockpot if desired and mix with the sauce.
  8. Garnish with fresh parsley before serving.

Notes

  • Add spinach or mushrooms during the last 30 minutes for variation.
  • Use half-and-half for a lighter version.
  • Let sauce simmer uncovered on high briefly to thicken if needed.
