Crockpot French Onion Meatloaf with Melted Swiss Cheese is a comforting twist on classic meatloaf, slow-cooked until tender, seasoned with savory French onion mix, and topped with melty Swiss cheese for a rich and indulgent finish.

Ingredients

  • 2 lbs ground beef
  • 1 packet dry French onion soup mix
  • 1 cup bread crumbs
  • 2 large eggs
  • 1/2 cup milk
  • 2 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 68 slices Swiss cheese
  • Optional: chopped parsley for garnish

Instructions

  1. In a large bowl, combine ground beef, French onion soup mix, bread crumbs, eggs, milk, Worcestershire sauce, garlic powder, salt, and pepper.
  2. Mix gently until ingredients are just combined, being careful not to overwork the meat.
  3. Shape mixture into a loaf and place in the bottom of a greased slow cooker.
  4. Cover and cook on low for 6–7 hours, or on high for 3–4 hours, until the internal temperature reaches 160°F.
  5. In the last 15 minutes of cooking, layer Swiss cheese slices on top, cover, and allow them to melt.
  6. Let the meatloaf rest for 10 minutes before slicing. Garnish with parsley if desired.

Notes

  • For extra richness, mix in sautéed or caramelized onions.
  • Swiss cheese can be swapped with Gruyère or provolone.
  • Add Dijon mustard or red pepper flakes for a spicier kick.
  • Store leftovers in the fridge for up to 4 days or freeze individual slices for later use.
  • Can also be baked in a loaf pan at 375°F for 50–60 minutes, then topped with cheese and broiled.
