Crunchy Asian Sesame Chicken Salad is a refreshing, flavor-packed dish loaded with colorful vegetables, juicy chicken, and crispy toppings, all tossed in a bold, nutty sesame dressing. It’s quick to make, great for meal prep, and satisfying enough for a full meal.

Ingredients

  • 2 cups shredded cooked chicken (grilled or rotisserie)
  • 2 cups Napa cabbage or coleslaw mix
  • 1 cup red cabbage, shredded
  • 1 cup carrots, julienned or shredded
  • 1 bell pepper (red or yellow), thinly sliced
  • 2 green onions, chopped
  • 1/2 cup shelled edamame (optional)
  • 1/4 cup sliced almonds
  • 1/2 cup crispy wonton strips or chow mein noodles
  • 1 tbsp sesame seeds (optional)
  • For the sesame dressing:
  • 3 tbsp soy sauce or tamari
  • 2 tbsp rice vinegar
  • 1 tbsp toasted sesame oil
  • 2 tbsp olive oil
  • 1 tbsp honey or maple syrup
  • 1 tsp fresh ginger, grated
  • 1 clove garlic, minced
  • Optional: 1 tsp lime juice or a pinch of red pepper flakes

Instructions

  1. Prep all the vegetables and place them in a large mixing bowl along with the shredded chicken and optional edamame and almonds.
  2. In a separate bowl or jar, whisk together all dressing ingredients until smooth and well combined.
  3. Pour the dressing over the salad and toss until everything is evenly coated.
  4. Top with crispy wonton strips, chow mein noodles, or sesame seeds just before serving.

Notes

  • Store the salad undressed and add the dressing and crunchy toppings just before eating to maintain texture.
  • Swap chicken for tofu, shrimp, or steak for variety.
  • Mandarin oranges or cucumbers make great fresh additions.
  • Use tamari for a gluten-free version.
