Ingredients

  • 2 cups sliced cucumbers (English or Persian)
  • 1.5 cups sliced fresh strawberries
  • 1/4 small red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice or balsamic vinegar
  • 1 teaspoon honey or maple syrup
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 tablespoons chopped fresh mint or basil

Instructions

  1. Wash and slice the cucumbers and strawberries. Thinly slice the red onion.
  2. In a large bowl, combine the cucumbers, strawberries, and red onion.
  3. In a small bowl, whisk together the olive oil, lemon juice or vinegar, honey or maple syrup, salt, and pepper.
  4. Pour the dressing over the salad and gently toss to combine.
  5. Sprinkle chopped mint or basil on top and give the salad one last gentle toss before serving.
