Pumpkin Spice Cottage Cheese Pancake Bites are fluffy, protein-rich mini bites made with cottage cheese, pumpkin puree, and warm spices. Perfect for fall breakfasts, snacks, or meal prep, they’re lightly sweet, festive, and wholesome.

Ingredients

  • 1 cup cottage cheese
  • 2 large eggs
  • 1/2 cup pumpkin puree (canned or fresh)
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice (or cinnamon, nutmeg, and ginger mix)
  • 1/4 cup almond flour (or oat flour)
  • 12 teaspoons honey or maple syrup (optional)
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C) and grease a mini muffin tin.
  2. In a blender or food processor, combine cottage cheese, eggs, pumpkin puree, vanilla, pumpkin spice, flour, sweetener (if using), and salt. Blend until smooth.
  3. Pour batter into muffin cups, filling each about 3/4 full.
  4. Bake for 18–20 minutes until set and lightly golden on top.
  5. Cool for a few minutes before removing from tin. Serve warm or store for later.
