This Delicious Satay Beef Noodle Soup features tender beef slices in a creamy, spicy, and nutty satay-infused broth poured over noodles. It’s an easy, flavor-packed comfort dish perfect for chilly nights or quick weeknight dinners.

Ingredients

  • 8 oz thinly sliced beef (sirloin, flank, or ribeye)
  • 6 oz rice noodles or egg noodles
  • 1 tbsp sesame oil or neutral oil
  • 1 small onion or 2 shallots, chopped
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 1/3 cup satay sauce or 1/4 cup peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp chili paste or sriracha (adjust to taste)
  • 1 tbsp brown sugar or palm sugar
  • 1 can (13.5 oz) coconut milk
  • 3 cups beef broth
  • 1 tbsp fish sauce (optional)
  • 1 tbsp lime juice
  • Fresh cilantro, scallions, and crushed peanuts for garnish

Instructions

  1. Heat oil in a large pot over medium heat. Sauté onion, garlic, and ginger until fragrant and soft, about 2–3 minutes.
  2. Add satay sauce (or peanut butter), soy sauce, chili paste, and sugar. Stir and cook for 1 minute.
  3. Pour in coconut milk and beef broth. Bring to a simmer.
  4. Add sliced beef and cook for 3–5 minutes, or until just cooked through.
  5. Meanwhile, cook noodles according to package directions. Rinse and divide among serving bowls.
  6. Taste the broth and adjust with fish sauce, lime juice, or more chili as needed.
  7. Ladle hot broth and beef over the noodles. Garnish with cilantro, scallions, and crushed peanuts.

Notes

  • Use light coconut milk for a lighter version.
  • Substitute beef with tofu or chicken for variety.
  • Store broth and noodles separately to prevent sogginess.
  • Add bok choy, bean sprouts, or carrots for more veggies.
  • Freeze broth separately; add fresh noodles when reheating.
