Moist and fragrant orange ginger honey cakes with bright citrus notes, warm spice, and natural honey sweetness, perfect for breakfast, tea time, or dessert.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup honey
  • 1/4 cup granulated sugar
  • 1 tablespoon orange zest
  • 1/3 cup fresh orange juice
  • 1/3 cup vegetable oil or melted butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon fresh grated ginger (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin or small cake molds.
  2. In a bowl, whisk together the flour, baking powder, ground ginger, cinnamon, and salt.
  3. In a separate bowl, whisk the eggs, honey, and sugar until smooth.
  4. Stir in the orange zest, orange juice, oil or melted butter, and vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  6. Fold in the fresh grated ginger if using.
  7. Divide the batter evenly into the prepared pan.
  8. Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow the cakes to cool slightly before removing from the pan.

Notes

  • Drizzle with an orange-honey glaze for extra sweetness.
  • Add a pinch of cloves or cardamom for more spice.
  • This batter can also be baked in a loaf pan; adjust baking time accordingly.
  • Enjoy warm or at room temperature.
