Easy Apple Cinnamon Breakfast Bars are soft, chewy, and filled with cozy apple and spice flavors. Perfect for a quick breakfast or snack, these wholesome bars are made with oats, fresh apples, and simple pantry staples. Great for meal prep and kid-friendly too!

Ingredients

  • 1 1/2 cups rolled oats
  • 3/4 cup all-purpose flour or whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional)
  • 1/4 teaspoon salt
  • 1 cup apples, peeled and finely diced or shredded
  • 2 large eggs
  • 1/2 cup unsweetened applesauce
  • 1/3 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1/4 cup coconut oil or melted butter
  • Optional: 1/4 cup chopped nuts (walnuts or pecans)
  • Optional: 1/4 cup raisins or mini chocolate chips
  • Optional: 1 tablespoon flaxseed
  • Optional: sprinkle of brown sugar on top

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8 or 9×9-inch baking pan with parchment paper.
  2. In a large bowl, whisk together the oats, flour, baking powder, cinnamon, nutmeg (if using), and salt.
  3. In another bowl, mix the eggs, applesauce, maple syrup, vanilla extract, and melted coconut oil or butter until smooth.
  4. Combine the wet and dry ingredients, stirring until just combined.
  5. Fold in the diced apples and any optional add-ins like nuts or raisins.
  6. Pour the batter into the prepared pan and spread evenly. Sprinkle brown sugar on top if desired.
  7. Bake for 25–30 minutes, or until the bars are golden and set in the center.
  8. Let cool completely in the pan before slicing into bars.

Notes

  • Use rolled oats for best texture; quick oats will make the bars softer.
  • Honeycrisp, Fuji, or Granny Smith apples work well for different flavor profiles.
  • Bars can be made vegan by using flax eggs and plant-based ingredients.
  • Wrap and freeze individual bars for up to 2 months for easy breakfasts.
  • Store in an airtight container at room temperature (2 days) or in the fridge (up to 5 days).
