Easy Beef Burritos are a hearty, flavorful, and fast meal made with seasoned ground beef, rice, beans, cheese, and more — all wrapped in a soft tortilla. Perfect for quick dinners, meal prep, or freezer-friendly lunches, they’re endlessly customizable and packed with comfort.

Ingredients

  • 4 large flour tortillas (burrito-size)
  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp taco seasoning
  • 1 tsp olive oil
  • 1 cup cooked rice (white, brown, or Mexican-style)
  • 1 cup canned black beans or pinto beans, rinsed and drained
  • 1 cup shredded cheddar or Mexican blend cheese
  • ½ cup salsa or diced tomatoes
  • ¼ cup sour cream (optional)
  • ½ cup shredded lettuce (optional)
  • 1 avocado or ½ cup guacamole (optional)

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté chopped onion until soft, about 3–4 minutes.
  2. Add garlic and cook for 30 seconds more.
  3. Add ground beef and cook until browned, breaking it up with a spoon, about 5–7 minutes.
  4. Stir in taco seasoning and a splash of water. Simmer until well-coated and thickened.
  5. Warm tortillas in a dry pan or microwave to make them pliable.
  6. Lay out each tortilla and layer with rice, beans, seasoned beef, cheese, salsa, and optional ingredients like sour cream, lettuce, or avocado.
  7. Fold in the sides and roll tightly into burritos.
  8. Optional: toast burritos seam-side down in a skillet until golden and crisp.
