Buckeyes are no-bake peanut butter candies partially dipped in chocolate to resemble the nut of the Ohio buckeye tree. They’re creamy, rich, and incredibly easy to make with just a few ingredients.

Ingredients

  • 1 1/2 cups creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 1 tsp vanilla extract
  • 3 1/2 to 4 cups powdered sugar
  • 2 cups semi-sweet chocolate chips or melting chocolate
  • 1 tbsp shortening or coconut oil (optional, for smoother chocolate)

Instructions

  1. In a large bowl, mix peanut butter, softened butter, and vanilla extract until smooth.
  2. Gradually stir in powdered sugar until a thick, rollable dough forms.
  3. Roll the dough into small balls and place them on a lined baking sheet.
  4. Chill the balls in the refrigerator for at least 30 minutes to firm up.
  5. Melt the chocolate with shortening or coconut oil until smooth.
  6. Use a toothpick to dip each peanut butter ball into the chocolate, leaving the top exposed.
  7. Return the dipped balls to the baking sheet and refrigerate until the chocolate is set.

Notes

  • Use regular creamy peanut butter for best texture and consistency.
  • Chill the dough well before dipping to make handling easier.
  • For a festive look, drizzle with white chocolate after dipping.
  • Store in an airtight container in the fridge or freezer.
