This easy and delicious za’atar chicken is juicy, boldly flavored, and incredibly simple to make. With the earthy, tangy taste of za’atar spice and a quick marinade of lemon, garlic, and olive oil, it’s perfect for baking, grilling, or pan-searing. Serve it with rice, roasted vegetables, or tuck it into wraps and salads for a flavorful, fuss-free meal.

Ingredients

  • 1 ½ lbs chicken thighs or breasts (bone-in or boneless)
  • 2 tbsp olive oil
  • 1 ½ tbsp za’atar spice blend
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice
  • Salt and black pepper, to taste
  • Optional: fresh parsley or mint for garnish, lemon wedges for serving

Instructions

  1. In a medium bowl, whisk together olive oil, lemon juice, garlic, za’atar, salt, and pepper.
  2. Add the chicken and toss to coat evenly. Cover and marinate in the fridge for at least 30 minutes, or up to overnight for more flavor.
  3. Preheat the oven to 400°F (200°C), or heat a grill or skillet over medium-high heat.
  4. Cook the chicken until golden and cooked through—about 25–30 minutes in the oven, or 6–8 minutes per side on the grill or stovetop, depending on thickness.
  5. Let the chicken rest for a few minutes before serving. Garnish with fresh herbs and lemon wedges if desired.

  • For extra heat, add chili flakes or cayenne to the marinade.
  • Stir in a spoonful of plain yogurt for a creamy marinade twist.
  • Great on wings, drumsticks, or even tofu for a vegetarian option.
