This Easy Grilled Cheese Burrito Copycat is a crave-worthy homemade version of the fast-food favorite, filled with seasoned beef, rice, cheese, chipotle sauce, and sour cream, then grilled to cheesy, golden perfection. It’s easy, customizable, and ultra-satisfying.

Ingredients

  • 4 large flour tortillas
  • 1 lb ground beef
  • 2 tbsp taco seasoning
  • 1/4 cup water
  • 1 cup cooked rice (white or seasoned)
  • 1/2 cup nacho cheese sauce or 1 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 1/4 cup chipotle sauce or chipotle mayo
  • 1 cup shredded cheese (Mexican blend or cheddar, for exterior)
  • 2 tbsp butter or oil, for grilling

Instructions

  1. Brown ground beef in a skillet over medium heat. Drain excess fat and stir in taco seasoning and water. Simmer until thickened, about 5 minutes.
  2. While the beef cooks, prepare cooked rice and warm the nacho cheese sauce (if using).
  3. Lay tortillas flat and layer the center with rice, beef, nacho cheese or shredded cheese, chipotle sauce, and sour cream.
  4. Fold in the sides, then roll from the bottom up to form a tight burrito.
  5. Heat a skillet over medium heat and sprinkle about 1/4 cup shredded cheese directly onto the pan in a circle the size of a burrito.
  6. Place the burrito seam-side down onto the cheese. Cook 2–3 minutes until cheese is melted and forms a crust. Flip and cook other side for 1–2 minutes.
  7. Remove from heat, let rest for 1 minute, then slice and serve.
