Easy Hamburger Potato Casserole

A hearty and comforting casserole made with layers of seasoned ground beef, tender potatoes, and a creamy, cheesy sauce. Perfect for family dinners or potlucks.

Ingredients

  • 1 lb lean ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced (optional)
  • 45 medium russet or Yukon Gold potatoes, thinly sliced
  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken soup)
  • 1/2 cup milk
  • 1 1/2 cups shredded cheddar cheese
  • Salt and black pepper, to taste
  • 1/2 tsp paprika (optional)
  • 1 tbsp butter (for greasing or dotting on top)
  • 2 tbsp chopped fresh parsley (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish with butter or cooking spray.
  2. In a skillet over medium heat, cook ground beef, onion, and garlic (if using) until browned. Drain fat and season with salt, pepper, and paprika.
  3. In a bowl, whisk together cream of mushroom soup and milk until smooth.
  4. Layer half of the sliced potatoes in the prepared dish, followed by half the beef mixture, then half of the soup mixture.
  5. Repeat layers with remaining potatoes, beef, and soup mixture.
  6. Cover with foil and bake for 50–55 minutes until potatoes are tender.
  7. Remove foil, sprinkle cheese on top, and bake uncovered for another 10–15 minutes until cheese is melted and bubbly.
  8. Let cool for 5–10 minutes before serving. Garnish with parsley if desired.

Notes

  • Use cream of celery or cheddar soup for flavor variation.
  • Add mushrooms, peas, or corn for extra veggies.
  • Ground turkey or sausage can be used instead of beef.
  • Add sour cream to the soup mix for extra creaminess.
  • Casserole can be assembled ahead and baked when ready.
