Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 2 tablespoons key lime juice (or lime juice)
  • 1 tablespoon lime zest
  • 1/2 teaspoon vanilla extract

For the lime glaze

  • 1 cup powdered sugar
  • 12 tablespoons key lime juice (or lime juice)
  • 1 teaspoon lime zest

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a separate bowl, cream butter and granulated sugar until light and smooth.
  4. Add egg, lime juice, lime zest, and vanilla extract to the butter mixture and mix until combined.
  5. Gradually mix in the dry ingredients until a soft dough forms.
  6. Scoop small portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10–12 minutes, or until the edges are set and bottoms are lightly golden.
  8. Let cookies cool completely on a wire rack.
  9. To make the glaze, whisk powdered sugar with lime juice until smooth, then stir in zest.
  10. Drizzle glaze over cooled cookies and let it set before serving.
