Ingredients

  • 1½ cups all-purpose flour
  • 1½ cups granulated sugar
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 4 large eggs, room temperature
  • 2 tablespoons lemon zest
  • ⅓ cup fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar (for glaze)
  • 23 tablespoons fresh lemon juice (for glaze)
  • 1 tablespoon lemon zest (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper and lightly spray with cooking spray.
  2. In a medium bowl, whisk together flour and salt.
  3. In a large mixing bowl, cream butter and sugar until light and fluffy (about 3–4 minutes).
  4. Add eggs one at a time, mixing well after each.
  5. Stir in lemon zest, lemon juice, and vanilla extract until combined.
  6. Fold in flour mixture just until no dry flour remains.
  7. Spread batter evenly in prepared pan.
  8. Bake for 25–30 minutes, until top is lightly golden and a toothpick comes out clean.
  9. Cool completely in pan.
  10. For glaze: Whisk powdered sugar, lemon juice, and lemon zest until smooth.
  11. Spread glaze over cooled brownies, let set, then slice into squares.
