Easy Slow Cooker Beef, Potato & Cabbage Dinner

A hearty and comforting slow cooker meal made with tender beef, soft potatoes, and savory cabbage, all cooked low and slow into a cozy one-pot dinner.

Ingredients

  • 2 lb beef stew meat or chuck roast, cut into chunks
  • 2 lb potatoes, peeled and chopped
  • 1 small head green cabbage, cut into wedges
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 2 tbsp olive oil
  • 1 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried thyme

Instructions

  1. Place chopped potatoes and sliced onion in the bottom of the slow cooker.
  2. Add the beef on top of the vegetables.
  3. Season with salt, black pepper, paprika, and dried thyme.
  4. Sprinkle minced garlic over everything.
  5. Pour beef broth into the slow cooker.
  6. Place cabbage wedges on top and drizzle lightly with olive oil.
  7. Cover and cook on low for 7–8 hours, until beef is tender and vegetables are soft.
  8. Gently stir before serving and adjust seasoning if needed.

Notes

  • Browning the beef first adds extra flavor but is optional.
  • Add carrots for extra sweetness.
  • Red potatoes hold their shape well in slow cooking.
  • Stir in a small knob of butter before serving for richness.
