Ingredients

  • 2 cups cherry or grape tomatoes, halved
  • ½ cup crumbled feta cheese
  • ¼ red onion or shallot, thinly sliced (optional)
  • 2 tablespoons fresh basil or parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar or lemon juice
  • Salt, to taste
  • Black pepper, to taste
  • Optional: diced cucumber, Kalamata olives, avocado slices

Instructions

  1. Place halved tomatoes into a mixing bowl.
  2. Add sliced red onion or shallot if using.
