These eyeball caprese skewers are a spooky Halloween twist on the classic Italian appetizer. Mozzarella balls become creepy ‘eyeballs’ with olive pupils and optional red food coloring for a bloodshot effect, paired with juicy tomatoes and basil for a festive, fresh party snack.

Ingredients

  • Fresh mozzarella balls (ciliegine size)
  • Cherry tomatoes
  • Fresh basil leaves
  • Black or green olives (sliced into rings)
  • Red food coloring (optional, for a bloodshot effect)
  • Wooden skewers or toothpicks
  • Balsamic glaze or olive oil (optional, for serving)

Instructions

  1. Prepare the mozzarella ‘eyeballs’: Place an olive slice on each mozzarella ball to create a pupil. Add a touch of red food coloring around edges for a bloodshot look.
  2. Assemble skewers: Thread one cherry tomato, one basil leaf, and one mozzarella ‘eyeball’ onto a skewer. Repeat the pattern if skewers are long.
  3. Finish and serve: Arrange skewers on a platter. Optionally drizzle with balsamic glaze or olive oil before serving.

Notes

  • Tomato swap: Use grape tomatoes for a different shape.
  • Extra flavor: Marinate mozzarella in olive oil, garlic, and herbs first.
  • Color boost: Drizzle with pesto for vibrant flavor.
  • Scarier look: Use green olives with pimentos for more realistic ‘eyeballs.’
