Farmer’s cheese cake with raisins is a rustic, tender dessert made with creamy cheese, plump raisins, and a buttery crust. Lightly sweet and delightfully tangy, it’s perfect for breakfast, dessert, or with an afternoon cup of tea.

Ingredients

  • 1½ cups farmer’s cheese
  • 3 eggs
  • ½ cup sugar
  • 1 tsp vanilla extract
  • ½ cup raisins (soaked and drained, optional)
  • ¾ cup all-purpose flour
  • 1 tsp baking powder
  • ¼ cup butter, melted
  • 2 tbsp sour cream (optional)
  • 1 tsp lemon zest (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, beat eggs and sugar together until light and fluffy.
  3. Mix in vanilla extract, melted butter, farmer’s cheese, and sour cream if using.
  4. Stir in flour, baking powder, and lemon zest until well combined.
  5. Fold in raisins.
  6. Pour the batter into the prepared baking dish and smooth the top.
  7. Bake for 40–45 minutes, or until golden brown and set in the center.
  8. Let cool before slicing and serving.

Notes

  • Use ricotta or quark as a substitute—strain first to reduce moisture.
  • Dried cranberries or chopped apricots can replace raisins.
  • Top with powdered sugar or serve with fresh fruit for extra flair.
  • Cool completely before slicing for cleaner cuts.
  • Wrap slices individually for freezing—reheat in the microwave.
