This Fashioned Rice Pudding is a creamy, nostalgic dessert made with quick-cooking rice, milk, and a touch of vanilla and cinnamon. It’s warm, comforting, and easy to make in under 20 minutes.

Ingredients

  • 2/3 cup Minute Rice (instant white rice)
  • 2 3/4 cups milk
  • 1/3 cup sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon (optional)
  • 1 egg, beaten (optional)
  • Raisins (optional)

Instructions

  1. In a medium saucepan, combine milk, sugar, and salt. Bring to a gentle simmer over medium heat.
  2. Stir in Minute Rice and reduce heat to low. Cook uncovered for 10–12 minutes, stirring frequently.
  3. If using the egg, temper it by mixing a small amount of hot pudding into the beaten egg, then slowly add the egg mixture back into the saucepan while stirring constantly.
  4. Cook for another 2–3 minutes until thickened.
  5. Remove from heat and stir in vanilla extract, and optionally, cinnamon and raisins.
  6. Let cool slightly before serving warm or chilled.

Notes

  • Use almond or coconut milk for a dairy-free version.
  • Substitute brown sugar or maple syrup for a deeper flavor.
  • Add chopped nuts or shredded coconut for texture.
  • A pinch of nutmeg or cardamom changes the spice profile.
  • Top with jam or fruit compote for extra sweetness.
