Ingredients

  • Boneless beef chuck (cut into bite-sized pieces)
  • Yellow onions (thinly sliced)
  • Garlic (minced)
  • Butter
  • Olive oil
  • Beef broth
  • Dry white wine or red wine (optional)
  • Fresh thyme
  • Bay leaf
  • Flour (for thickening)
  • Salt
  • Black pepper
  • Baguette or crusty bread slices
  • Gruyère or Swiss cheese (shredded)

Instructions

  1. Season beef with salt and pepper. Brown in batches in olive oil in a Dutch oven. Set aside.
  2. Add butter and onions to the same pot. Cook over medium heat for 30–40 minutes, stirring often, until deeply caramelized.
  3. Add garlic and cook for 1 minute. Stir in flour and cook for 2 more minutes.
  4. Deglaze with wine, scraping up browned bits. Return beef to the pot along with broth, thyme, and bay leaf.
  5. Simmer covered for 1.5 to 2 hours, until beef is fork-tender and flavors meld.
  6. Toast baguette slices, top with shredded Gruyère, and broil until bubbly and golden.
  7. Ladle stew into bowls and top each with cheesy bread just before serving.
