A hearty and comforting cabbage dish made with seasoned ground beef, tender cabbage, tomatoes, and corn, topped with melted cheddar cheese and crunchy corn chips. Perfect for casual dinners, potlucks, or a satisfying family meal.

Ingredients

  • 1 medium head green cabbage, chopped
  • 1 lb (450 g) ground beef
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 can (8 oz) tomato sauce
  • 1 cup frozen corn
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 2 cups corn chips

Instructions

  1. Heat a large skillet or pot over medium heat.
  2. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain excess grease.
  3. Add the diced onion and minced garlic. Cook until softened and fragrant.
  4. Stir in the chopped cabbage and cook for 5–7 minutes until it begins to soften.
  5. Add the diced tomatoes with green chilies, tomato sauce, frozen corn, chili powder, ground cumin, paprika, salt, and black pepper.
  6. Stir well, cover, and simmer for 15–20 minutes until the cabbage is tender.
  7. Sprinkle shredded cheddar cheese evenly over the top and allow it to melt.
  8. Just before serving, top with corn chips for added crunch.

  • Substitute ground turkey for a lighter option.
  • Add diced jalapeños or cayenne pepper for extra heat.
  • Stir in cooked rice or black beans for a heartier meal.
  • Top with sour cream or chopped green onions before serving if desired.
