This Fruity Pebbles sushi is a colorful no-bake dessert made with a marshmallow-cereal base, creamy filling, and a fun fruity roll-up wrap. Sweet, chewy, and crunchy, it’s a whimsical treat perfect for parties, kids’ snacks, or anytime you want a playful twist on dessert.

Ingredients

  • 3 cups marshmallows
  • 2 tbsp butter
  • 2 cups crispy rice cereal
  • 1/2 cup Fruity Pebbles cereal (for base)
  • 4 oz cream cheese, softened
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 1 large fruit roll-up
  • 1/2 cup Fruity Pebbles cereal (for coating)

Instructions

  1. In a large saucepan over low heat, melt butter and marshmallows, stirring until smooth.
  2. Remove from heat and stir in crispy rice cereal and 1/2 cup Fruity Pebbles until fully coated.
  3. Spread mixture on parchment paper and press into a thin rectangle (about 1/4 inch thick).
  4. In a bowl, mix cream cheese, powdered sugar, and vanilla until smooth.
  5. Spread cream cheese mixture evenly over cooled cereal layer.
  6. Place fruit roll-up on top, trimming to fit.
  7. Using parchment paper to help, roll tightly into a log.
  8. Roll log in remaining Fruity Pebbles to coat.
  9. Chill for 20–30 minutes, then slice into bite-sized pieces.

Notes

  • Swap cream cheese for flavored cream cheese for a fruity twist.
  • Use cocoa rice cereal and chocolate spread for a chocolate version.
  • Add sliced strawberries or banana inside for freshness.
  • Butter hands or spatula before shaping to prevent sticking.
