Funeral potatoes are a creamy, cheesy, and comforting casserole made with hash browns, sour cream, and shredded cheese, topped with a buttery cornflake crunch. This beloved dish is perfect for holidays, potlucks, or cozy family meals.

Ingredients

  • 1 (30 oz) bag frozen shredded hash browns, thawed
  • 2 cups sour cream
  • 1 can (10.5 oz) cream of chicken soup (or cream of mushroom for vegetarian)
  • 2 cups shredded cheddar cheese
  • 1/2 cup finely chopped onion
  • 1/2 tsp garlic powder (optional)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups cornflakes, crushed
  • 1/4 cup butter, melted

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large bowl, mix sour cream, cream of chicken soup, shredded cheese, chopped onion, garlic powder (if using), salt, and pepper.
  3. Fold in thawed hash browns until evenly coated.
  4. Spread the mixture evenly in the prepared baking dish.
  5. In a small bowl, toss crushed cornflakes with melted butter.
  6. Sprinkle cornflake topping evenly over the casserole.
  7. Bake for 45–50 minutes, until hot and bubbly with a golden topping.
  8. Let cool slightly before serving.
