Ingredients

  • 4 lamb chops (rib or loin)
  • 1 tbsp olive oil
  • Salt and black pepper, to taste
  • 2 tbsp unsalted butter
  • 3 cloves garlic, minced or smashed
  • 12 sprigs fresh rosemary or thyme (optional)
  • 1 tsp lemon juice (optional)

Instructions

  1. Remove lamb chops from the fridge and let sit at room temperature for 20 minutes.
  2. Season both sides generously with salt and pepper.
  3. Heat olive oil in a heavy skillet over medium-high heat until shimmering.
  4. Sear lamb chops for 3–4 minutes per side until golden and crusted, adjusting time based on thickness.
  5. Reduce heat slightly and add butter, garlic, and rosemary or thyme to the pan.
  6. Spoon garlic butter over chops for 1–2 minutes to infuse flavor.
  7. Remove from heat and let rest for 5 minutes. Drizzle with lemon juice if desired and serve warm.
