Ingredients

  • 4 large bell peppers
  • 1 lb shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 4 tbsp butter
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Cut tops off bell peppers and remove seeds and membranes.
  2. Melt butter in a skillet over medium heat. Add garlic and cook 1-2 minutes until fragrant.
  3. Add shrimp and sauté until pink, about 3-4 minutes. Remove from skillet and chop into bite-sized pieces.
  4. In a bowl, combine chopped shrimp, breadcrumbs, Parmesan, salt, and pepper. Mix well.
  5. Fill each pepper generously with the shrimp mixture.
  6. Place peppers in a baking dish and bake for 25-30 minutes until tender and golden on top.
  7. Sprinkle with chopped parsley before serving.
