These Garlic Herb & Spinach Puff Pastry Rolls are flaky, golden, and packed with creamy spinach, garlic, and herbs—perfect as a savory appetizer, brunch snack, or party treat.

Ingredients

  • 1 sheet frozen puff pastry, thawed
  • 1 tbsp olive oil or butter
  • 2 garlic cloves, minced
  • 2 cups fresh spinach (or 1 cup frozen, thawed and drained)
  • 1/4 cup cream cheese or ricotta
  • 1/4 cup grated Parmesan cheese
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh herbs (parsley, basil, or dill), chopped
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat oven to 400°F (204°C). Line a baking sheet with parchment paper.
  2. In a skillet, heat olive oil or butter and sauté garlic until fragrant. Add spinach and cook until wilted (or warm through if using frozen).
  3. Remove from heat. Stir in cream cheese, Parmesan, chopped herbs, salt, and pepper until well mixed.
  4. On a lightly floured surface, unroll puff pastry. Spread the spinach mixture evenly over the sheet, leaving a 1/2-inch border.
  5. Roll up the puff pastry tightly into a log and slice into 3/4 to 1-inch rounds (makes 12–16 pieces).
  6. Place rolls cut-side up on the baking sheet. Brush tops with beaten egg.
  7. Bake for 18–22 minutes or until golden brown and puffed.
  8. Cool slightly before serving. Enjoy warm or at room temperature.

Notes

  • Add sun-dried tomatoes or crumbled feta for variation.
  • Use kale or arugula in place of spinach.
  • Chilling the filled log before slicing helps maintain shape.
  • Serve with marinara, garlic aioli, or creamy herb dip.
