Garlic Parmesan Chicken and Potatoes is a one‑pan meal with juicy chicken and crispy roasted potatoes in a flavorful garlic‑butter and Parmesan sauce. It’s hearty, simple, and perfect for a cozy dinner with minimal cleanup.

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 1.5 lbs baby potatoes, halved or quartered
  • 4 garlic cloves, minced
  • 1/2 cup grated Parmesan cheese
  • 3 tbsp butter, melted
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1 tsp paprika (optional)
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (optional for garnish)

Instructions

  1. Preheat oven to 400°F (200°C) and lightly grease a large baking dish or sheet pan.
  2. In a bowl, toss the halved potatoes with olive oil, minced garlic, Parmesan, Italian seasoning, salt, and black pepper.
  3. Spread the seasoned potatoes on one side of the baking dish.
  4. Season the chicken with salt, pepper, paprika (if using), and a bit of Parmesan. Place the chicken next to the potatoes in the same pan.
  5. Drizzle the melted butter evenly over the chicken and potatoes.
  6. Bake for 35–40 minutes, or until the chicken is cooked through and the potatoes are golden and tender. Broil for the last 2–3 minutes if you want extra crispiness.
  7. Garnish with chopped parsley before serving for a fresh touch.
