Ingredients

  • 4 large eggs
  • 1 cup whole milk (or heavy cream for extra richness)
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 6 slices thick-cut bread (brioche, challah, or Texas toast recommended)
  • 1 tablespoon butter (for cooking)
  • 1 tablespoon neutral oil (canola or avocado)

Instructions

  1. Make the custard: In a large bowl, whisk together eggs, milk, sugar, vanilla, cinnamon, and salt until smooth and fully combined.
  2. Prep the bread: If using fresh bread, dry slices in a 300°F oven for 10 minutes to help them absorb custard without falling apart.
  3. Dip the slices: Dip each slice into the custard for about 10 seconds per side. Let the excess drip off.
  4. Heat the skillet: Heat a nonstick pan or griddle over medium heat. Add butter and oil and swirl to coat.
  5. Cook until golden: Add the dipped bread slices and cook 2–3 minutes per side, or until golden and crispy.
  6. Serve or keep warm: Serve immediately, or place cooked slices on a baking sheet in a 200°F oven to stay warm until ready to serve.
